Are the Ethernet clamshell RJ45 connectors worth the extra cost?

I agree, the pass-through type makes it a lot easier to ensure you have the cables in the correct position as well.

Especially if you crimp it wrong and have to cut off the end.

I think the major benefit is that you ensure that you get the sheath into the crimp and you don't have excess wire that can flex and break.
I think it depends on the technique and cable stock you work with. The box I have now I would consider crap.. Orange/white, Green/white, etc.. so if you miss sort the pairs you have to cut and start again. Good cable will always have the strip. - At least in my opinion..
The pass through cable 'requires' a special crimper to cut off the excess.. but you can get away with using a razor.

Not on hand made cables, annoys me more than saves...

I would just get some basic clip protectors and the RJ45 jacks.
Some of the clip protectors though are like trying to bend steel.... so yeah... prepare for a hand workout?

You can get away with a utility knife or a good set of wire cutters. Or if you're in a bind the bend-and-break method works. I don't generally recommend it though as it can mess up the crimp.
