Specific to MineCraft, they are working extremely hard to bring the mobile version up to feature parity. The biggest feature being multiplayer. This basically kills any need for general players to have an emulated server.

My kids literally discovered this last night and were so excited that they were able to play with each other, but still very sad that what we had worked on was gone.

Not that I know of without going offline, which would also break the online server process.
I have nothing but iOS, so cannot speak for other devices, but auto updates are optional.

Not without rooting it, I don't think. You aren't even allowed to put in network info like DNS servers except under very specific conditions.

They aren't on Fire devices. I have an original Kindle Fire, still working great, but it doesn't give you the option to not update.

Try these steps on the kindle fire.
To disable automatic app updates on the Amazon Kindle Fire HD, follow the below procedure:

Open the Quick settings menu.

Tap on More.

Go to Applications > Amazon Applications.

Tap on App Store Automatic Updates.

Uncheck Enable Automatic Updates.

I thought that months ago but caught some heat for saying it.
No, what I gave you heat for was saying that Mojang was intentionally changing things to make PocketMine not work.
I did also point out that people that work on emulators come and go, and referenced my own experience working on the EverQuest Emulator project.
Anyway, on to current time, there is little to no reason to continue the PocketMine project itself when the original purpose (of allowing you to have controlled online shared worlds) is now being enabled by Mojang natively.

While there are other reasons that PocketMine is still a good idea (such as no need for XBox Live account), the primary driver is gone.
