Solved How to copy files out of a VM that must remain off network

So the subject is the question, how can I copy files out of a VM that must remain off network?
Or how can I take a VM from XS and deploy it to a physical?

This pretty much is it. Either copy the entire VM image off and mount it at the destination or mount the disk of the VM to another VM on the same host and copy files from it there.

Another option would be to simply disconnect the network in the VM settings and then pass through a USB or something.

I've considered that in the past, but passing a generic USB through without a PCI card in between in a major pain.

It is simple on ESXi and generally not a problem on Hyper-V. I still do not have my home office setup to bring XS7 online yet, so cannot say there.
That is assuming you have physical access to the hardware.

Same with KVM. Just plug it in and pick the USB device.
